Effect of Drying and Storage Conditions on Aflatoxin Incidence in Copra
June 1, 1987

The development of proper and effective methods of drying and storage of copra can help prevent or at least minimize mold infection and aflatoxin incidence. Copra that is free from aflatoxin-producing fungi can be produced by drying the meat within the temperature range of 50 – 71 OC. Fluctuations outside the temperature range could adversely affect the quality and stability of copra during storage.

Engineering Design and Fabrication of Coconut Grater and Presser

Development of scaled-up prototype using the earlier bench model was undertaken. The performance of the prototype was evaluated. In the initial test, the prototype had a lower efficiency (55%) than its predecessor. The problem was traced to lack of outlets in the pot that would allow the liquid coconut milk to pass through. Hence, more holes were drilled. The efficiency consequently increased to about 62%.

Coconut milk is considered as a promising alternative product, hence an analysis of its potentials in both domestic and international market is in order. Results of this study showed that coconut milk has good potentials for both domestic and export markets. Some alternative food uses of coconut milk identified are canned liquid coconut milk, coconut milk powder, coconut milk protein isolates, coconut spread enriched with legumes, etc.
