State-of-the-Art Vinegar-making in the Philippines
June 1, 1986

Based on the study, the most common methods of making vinegar being practiced in the Philippines are the (1) slow or “tapayan” process, (2) quick or trickling process, and (3) submerged acetator process. Of these three processes, the “tapayan” method was assessed to be most practical and convenient method suitable for village-farmers for the following reasons: (1) vinegar production can be operated or handled by women in the household and (2) the copra “tapayan” site is a good and immediate source of the coconut water which is normally thrown away.

Glossary of Coconut Production and Utilization Terms

To promote better understanding among the coconut industry people and thereby facilitate technology transfer, PCRDF compiled coconut production and utilization terms in English and translate them to five Philippine dialects, namely Filipino, Bicolano, Cebuano, Ilongo, and Maguindanao.

Bench-scale Production and Pre-testing of Plant Growth Hormones from Coconut Water

The utilization of coconut water in extracting the plant growth hormones could prove to be profitable and might have desirable economic implications for the coconut industry. A manual extractor was designed and constructed to handle about 10 L of coconut water for the extraction of the plant growth hormones. Tests showed that CH2Cl2 at the various pH systems caused plant growth and there is a presence of growth substances (auxin-, cytokinin-, and gibberellin-like) as well as some growth inhibitors.

Improvement in the Processing of Coconut Water and Sap for Alcoholic Beverages
October 1, 1986

The preparation of wine from coconut water and sap using fermentation microorganisms was studied. Among the seven strains of yeasts that were tested, one (isolate 604) gave optimum yields of alcohol. The effects on the yield by other parameters, such as citric acid, lactic acid, temperature, and acidity of coconut water, were also determined. One of the products developed was coconut champagne.

Publication of Monograph on Communication and Coconut Production
January 6, 1986

The monograph entitled “Professorial Lectures on Communication and Coconut Production” authored by Dr. Ely D. Gomez was based on the research studies conducted in the following areas: socio-economic and communication research on coconut; communication patterns and behavior of coconut farmers; comparative study of the adoption of recommended practices by rice, corn, and coconut farmers; cultural determinants of the coconut farmers’ agricultural practices; and decision-making patterns of coconut farmers.
